A heavenly blend of structure and harmony.

The Chardonnay is sourced from the Grande Montagne de Reims, championing the Cru of Trépail, complemented with Chardonnay from the Vitryat, Sézannais and Côte des Blancs to a smaller extent.

The colour is bright gold, the bubble is lively and delicate. The nose is very expressive with notes of dried fruits and nuts: raisins, hazelnuts, figs, almonds, dates and plums. A hidden and delicate smell of rain after a long period of warm develops after airing. The mouth is marked by Cellar Master Carine Bailleul’s style of toast and mild spices, filling the palate. The attack is elegant and creamy. The finale is a nod to the famous ‘Paris-Brest’ choux pastry with praline.

Lengthy lees-ageing

Virtually languishing in obscurity for at least five years, the bottles will protect a precious secret. During this time, while resting on the lees, the wines will experience the alliance of chemistry and magic that enthralls palates the world over.

The wines will take in decades of history written on the chalk walls; to assimilate the very spirit and soul of all the ‘shapers’ behind Champagne Castelnau.

Lengthy lees-ageing provides a cocoon of sernity and plenitude to Castelnau champagnes. For those who taste their splendour, their patience is rewarded as the champagne’s full personality is released.
